It’s been a long time I’ve shared a yummy recipe, and this Cucumber Salad Recipe with Avocado & Cumin is a beautiful recipe for clear healthy skin.

I strongly believe eating a fresh salad every single day will help your skin heal, reduce inflammation, keep your skin young and supple, and give a you a healthy glow from the inside out.

There’s a few important details you must follow in order to get the most skin enhancing benefits from eating salads every day:

  • All ingredients must be fresh and real (don’t add any packaged ingredients like croutons, bacon bits, or other factory made items to your salads).
  • No pre-made store bought bottled salad dressing (always make your own homemade salad dressing with quality fresh ingredients).
  • To ensure you’re getting a good variety of nutrients, don’t always eat the same salad every single day – try to have a few different salads (with different ingredients) on rotation.
  • To heal breakouts and acne, I recommend using avocado instead of oil in your salad dressings. For clear skin purposes, many times the oils in your diet could be causing inflamed skin and acne breakouts because many of the supermarket oils are old, rancid, or not pure. I’ve found when you go easy on the oil and use avocado in your salad dressings instead, you’ll see a significant improvement in your skin. In general, for clear skin purposes, the less oils in your diet (both cooking and salad dressings oils), the better. And this doesn’t mean you need to be on a low fat diet, what it means is instead of using a bunch of processed oils, eat real foods containing healthy fats like avocado, coconut meat, nuts and seeds, eggs, fatty fish, and grass-fed meats.
Cucumber salad with avocado recipe for clear skin diet

Cucumber Salad Recipe with Avocado & Cumin (serves 1-2 people)

1 Cucumber (peeled & seeds removed, thinly sliced)
2 Scallions/Green Onions (thinly sliced)
10-15 Grape/Cherry Tomatoes (sliced)
1/4 cup fresh Cilantro/Coriander (chopped)
1/4 – 1/2 Avocado (diced)
1/2 Lime (juice of)
1/2 tsp Cumin (powder)
1/4 tsp Celtic Sea Salt

Instructions:

1 – Prepare all ingredients and put in a large mixing bowl.
2 – With a fork (or your clean hands), mash the avocado in with the ingredients so the avocado and all the ingredients are fully mixed.
3 – Serve immediately.

    1. The seeds make the salad very watery, so to not dilute the taste, I removed the seeds. I also find removing the peel makes it taste better too – but if you prefer to keep the peel & seeds, you can!

  1. Love this recipe it looks delicious and nutritious but even more so different from other boring Slad recipes. Would it ruin the health of it for your skihn if I added goat cheese? I don’t have horrible skin breakouts but I love this recipe because of how clean and healthy it sounds while looking delicious at the same time.
